Minced Beef with Spinach and Mushrooms 波菜免治牛肉

Ingredients:

  • 1 lb (500 g) Chinese spinach;
  • 3/4 lb (375 g) minced frank steak or lean ground beef;
  • 1/2 lb (250 g) mushrooms;
  • 4 tablespoons vegetable oil;
  • Sea salt, adjust for taste.

For marinate

  • 1/2 tablespoon minced ginger;
  • 1/2 teaspoon cornstarch;
  • 1 teaspoon liquid aminos (a healthier version of soy sauce can be find in health food store or upscale supermarket);
  • 1/2 teaspoon dark soy;
  • 1 teaspoon vegetable oil.

For thickening sauce

  • 1 teaspoon corn starch;
  • 1/2 teaspoon cane sugar;
  • 1 teaspoon liquid aminos;
  • 1 teaspoon dark soy sauce;
  • 1/4 cup (60 ml) water.

Recipe:

  1. Clean and cut spinach to 1” (2.5 cm) long;
  2. Add 2 tablespoons vegetable oil and 1/2 teaspoon sea salt in a sauce pan/wok over medium heat;
  3. Stir fry until it start to get soft;
  4. Cover and let it cooks;
  5. Take it out and set aside;
  6. Mince mushrooms in food processor;
  7. Add 1 tablespoon vegetable oil and cook minced mushroom;
  8. Mince frank steak in food processor;
  9. Take it out and place on a bpwl;
  10. Add minced ginger, cornstarch, liquid aminos and dark soy;
  11. Marinate for 5 -10 minutes;
  12. Add 1 tablespoon vegetable oil to a large sauce pan/wok over medium high heat;
  13. Add minced frank steak and spread it out evenly and cover;
  14. Cook until beef change color;
  15. Pour in minced mushroom and juice from cooking spinach;
  16. Add well stirred thickening sauce;
  17. It is done when it comes back to a boil;
  18. Plate and serve hot with rice.
