Minced Beef with Spinach and Mushrooms 波菜免治牛肉
Ingredients:
- 1 lb (500 g) Chinese spinach;
- 3/4 lb (375 g) minced frank steak or lean ground beef;
- 1/2 lb (250 g) mushrooms;
- 4 tablespoons vegetable oil;
- Sea salt, adjust for taste.
For marinate
- 1/2 tablespoon minced ginger;
- 1/2 teaspoon cornstarch;
- 1 teaspoon liquid aminos (a healthier version of soy sauce can be find in health food store or upscale supermarket);
- 1/2 teaspoon dark soy;
- 1 teaspoon vegetable oil.
For thickening sauce
- 1 teaspoon corn starch;
- 1/2 teaspoon cane sugar;
- 1 teaspoon liquid aminos;
- 1 teaspoon dark soy sauce;
- 1/4 cup (60 ml) water.
Recipe:
- Clean and cut spinach to 1” (2.5 cm) long;
- Add 2 tablespoons vegetable oil and 1/2 teaspoon sea salt in a sauce pan/wok over medium heat;
- Stir fry until it start to get soft;
- Cover and let it cooks;
- Take it out and set aside;
- Mince mushrooms in food processor;
- Add 1 tablespoon vegetable oil and cook minced mushroom;
- Mince frank steak in food processor;
- Take it out and place on a bpwl;
- Add minced ginger, cornstarch, liquid aminos and dark soy;
- Marinate for 5 -10 minutes;
- Add 1 tablespoon vegetable oil to a large sauce pan/wok over medium high heat;
- Add minced frank steak and spread it out evenly and cover;
- Cook until beef change color;
- Pour in minced mushroom and juice from cooking spinach;
- Add well stirred thickening sauce;
- It is done when it comes back to a boil;
- Plate and serve hot with rice.
