Steak with Eggs

Ingredients:

For steak

  • 1 piece New York strip steak, about 1 lb (0.5 kg);
  • 3 eggs;
  • 2 tablespoons flour;
  • 1 tablespoon safflower oil;
  • Sea salt.

For red wine sauce

  • 1/2 tablespoon safflower oil;
  • 1/4 cup Liquid Amino (a healthier version of soy sauce can be find in health food store or upscale supermarket);;
  • 2 tablespoons Worcestershire sauce;
  • 2 tablespoons dark soy sauce;
  • 1/4 cup (60 ml) red wine.

For thickening sauce

  • 1 teaspoon cornstarch;
  • 1/2 teaspoon cane sugar;
  • 1/4 (60 ml) cup water.

Serving for 4

For steak

  1. Clean the steak, pat dry;
  2. Add sea salt;
  3. Beat 3 eggs and add flour;
  4. Coat the steak with egg mixture;
  5. Add safflower oil to a large sauté pan over medium high heat;
  6. Place the steak in when the pan gets hot;
  7. Cook each side for 2 minutes;
  8. Put the whole pan in a 400˚F (200˚C) pre-heated oven for 5 minutes;
  9. Take out the steak, rest for 5-10 minutes before cutting into 1/2” thick slices at 30˚ angle.



For red wine sauce

  1. Add 1/2 tablespoon safflower oil to the sauté pan over medium high heat;
  2. Pour red wine sauce mixture, except red wine, when it gets hot;
  3. Add red wine, pull away from flame;
  4. Add thickening sauce, make sure it is well-mixed;
  5. When it comes back to a boil, pour on top of steak.
