Ingredients:
- 1 lb (0.5 kg) spare rib/pork chop, cut into 1” cubes;
- 1 1/2 tablespoons fermented black bean, rinse and soak in 1/2 cup water for 10 – 15 minutes, drain;
- 4 cloves garlic, peel and finely mince (about 1 1/2 teaspoons);
- 1 small piece ginger, peel and finely mince (about 1 1/2 teaspoons);
- 1 tablespoon Liquid Aminos (a healthier version of soy sauce can be find in health food store or upscale supermarket) or soy sauce;
- 1 tablespoon dark soy sauce;
- 1 teaspoon vegetable/canola oil;
- 1/4 teaspoon brown sugar;
- 2 cups jasmine rice.
For sauce
- 1 tablespoon Liquid Aminos;
- 1 tablespoon dark soy;
- 1/4 teaspoon sugar;
- 1/2 teaspoon sesame oil.

Serving for 4
- Press drained black bean, garlic and ginger in a mortar;
- Mix in Liquid Aminos and dark soy sauce;
- Add sugar;
- Add 1 teaspoon vegetable/canola oil;
- Marinate fermented black bean mixture and spare ribs/pork chops for 10 - 15 minutes;
- Steam rice with 1/2” (1 cm) deep of water on top of rice;
- Add spare ribs/pork chops when rice starts to bubble;
- Steam for 20 minutes or until meat falls off the bone;
- Top with sauce, optional;
- Serve hot.
