Steam Spare Rib with Black Bean Sauce 豆豉蒸排骨

Ingredients:

  • 1 1/2 lb (0.75 kg) spare ribs, cut into 1” cubes, easier to have the butcher do it, salt lightly;
  • 1 teaspoon peanut oil;
  • 3 tablespoons fermented black beans, rinsed and soaked in 1/2 cup (120 ml) water for 10 mintues, drain;
  • 4 cloves garlic, peeled and finely minced;
  • 1 small piece ginger, peeled and finely minced (about 2 tablespoons);
  • 2 tablespoons Liquid Aminos (a healthier version of soy sauce can be find in health food store or upscale supermarket);
  • 1 tablespoon dark soy sauce.

Recipe:

Serving for 2

  1. Press drained black beans, garlic and ginger in a mortar;
  2. Mix with Liquid Aminos and dark soy sauce;
  3. Add sugar;
  4. Mix black bean mixture and spare ribs in a 1” deep bowl, leveled;
  5. Steam for 20 minutes, serve hot.
  6. Good with rice.
