Ingredients:

For minced pork
- 1 piece shoulder pork or boneless pork chop, about 2 - 2 1/2 lb (1.0 - 1.25 kg);
- 3/4 lb (375 g) pickled mustard green, soak, clean and dry;
- 1 tablespoon minced ginger, (1 piece of ginger, about 4 oz (120 g), peel and
mince to small cubes);
- 1 teaspoon vegetable oil.
For marinate
- 1/4 teaspoon corn starch;
- 1 tablespoon Liquid Aminos (a healthier version of soy sauce can be find in health food store or upscale market) or soy sauce;
- 1 tablespoon dark soy sauce;
- A pinch cane sugar.
Recipe:
Serving for 4 with rice
- Soak pickled mustard green for 1/2 hour, clean and drain;
- Cut into 1/4” (0.5 cm) cubes;
- Clean pork, pat dry and mince;
- Add minced ginger, cornstarch, sugar, Liquid Aminos and dark soy sauce to minced pork and mix well;
- Mix with pickled mustard green;
- Mix in 1/2 teaspoon of cane sugar;
- Transfer to a shallow bowl, spread evenly;
- Add 1 teaspoon vegetable oil;
- Steam in a steamer/wok over water over medium high heat for 18 - 20 minutes;
- Check water level to avoid drying out;
- Turn off heat when it is cooked;
- Serve hot with rice.
