Minced Pork with Water Chestnuts 馬蹄蒸豬肉餠

Ingredients:

For minced pork

  • 1 piece shoulder pork or boneless pork chop, about 2 - 2 1/2 lb (1.0 - 1.25 kg);
  • 3/4 lb (375 g) water chestnuts, peel, clean and soak;
  • 1 tablespoon minced ginger, (1 piece of ginger, about 4 oz (120 g), peel and mince to small cubes);
  • 1/2 teaspoon corn starch;
  • 1/2 teaspoon sea salt;
  • 1 tablespoon Liquid Aminos (a healthier version of soy sauce can be find in health food store or upscale market) or soy sauce;
  • 1 teaspoon vegetable oil.

Recipe:

Serving for 4 with rice

  1. Peel and clean water chestnuts, soak in water to avoid turning brown;
  2. Coarsely chop in a food processor;
  3. Cut pork to smaller pieces and mince in a food processor;
  4. Add minced ginger, corn starch, salt and Liquid Aminos to minced pork and mix well;
  5. Mix in chopped water chestnuts;
  6. Transfer to a shallow bowl, spread evenly;
  7. Add 1 teaspoon vegetable oil;
  8. Steam in a steamer/wok on water over medium high heat for 20 minutes;
  9. Check water level to avoid drying out;
  10. Check pork to make sure has changed color and cook;
  11. Serve hot with rice.
