Ingredients:
- 1 lb (0.5 kg) spare ribs and 1 lb (0.5 kg) pork chop;
- 1/2 teaspoon cornstarch;
- 5 - 6 pickled plums;
- 2 tablespoons ground soy bean sauce;
- 4 cloves garlic, peel and finely mince;
- 1 small piece ginger, peel and finely mince (about 1 tablespoon);
- 1 tablespoon Liquid Aminos (a healthier version of soy sauce can be find in health food store or upscale supermarket);
- 1 tablespoon dark soy sauce;
- 1/2 tablespoon vegetable oil;
- 1 teaspoon cane sugar, adjust for taste.

- Clean spare ribs and pat dry;
- Cut into 1” cubes;
- Add cornstarch,
- Crust pickled plums, minced garlic, ginger and ground soy bean sauce in a mortar;
- Add Liquid Aminos, dark soy sauce and sugar, mix well;
- Mix in spare ribs;
- Transfer to a shallow bowl, spread evenly;
- Top with vegetable oil;
- Steam in a steamer/wok over water over medium high heat for 20 minutes;
- Check water level to avoid drying out;
- Turn off heat when it is cooked;
- Serve hot with rice.
