Ingredients:
- 1 squad, about 3/4 lb (375 g);
- 1/2 tablespoon duck sauce;
- 1 piece ginger, about 2 oz (60 g), peel, pound and chop;
- 4 - 5 cloves garlic, peel, pound and chop;
- 1 large shallot, thinly slice;
- 2 pieces star anise;
- 3 small rock sugar, about 1 oz (30 g), can use cane sugar;
- 1 teaspoon vegetable oil;
- 3/4 cup (180 ml) dark soy sauce;
- 1/4 cup (60 ml) liquid aminos, a healthier version of soy sauce;
- 2 tablespoons Chinese rice wine;
- 1 cup (240 ml) boiling water, or enough to cover the squad.

- Clean squad with salt and pat dry;
Tuck feet and wings for better presentation;
Spoon duck sauce inside the squad;
Rub with dark soy and let marinate for 45 minutes or more;
Add 1 teaspoon vegetable oil in a heavy sauce pan over medium high heat;
Sear ginger, garlic and shallot;
Add liquid aminos, dark soy and boiling water;
Add star anise and rock sugar;
Place squad in when the mixture comes to a boil;
Lower heat to medium when it comes back to a boil;
Cook for 10 minutes;
Turn the squad over and cook for another 7 minutes;
Shut off heat and let it sits for 45 minutes to cook through;
Take it out to cool;
Craft and place on asparagus or any season vegetables;
Serve warm.
