Steamed Chicken Wings with Wood Ear, Red Dates and Chinese Mushrooms 木耳冬菇紅棗蒸雞翅
Ingredients:
- 15 pieces chicken wings, about 1 1/4 lb - 1 1/2 lb (625 - 750 g);
- 10 pieces Chinese Shiitake mushrooms, soak for at less one hour;
- 2 large pieces wood ears, soak for at less one hour;
- 6 red dates, soak and seed;
- 1 piece ginger, finely julienne, about 3/4 tablespoon;
- 1/4 teaspoon cornstarch;
- A pinch cane sugar;
- 1/2 tablespoon Liquid Aminos (a healthier version of soy sauce can be find in health food store or upscale market) or soy sauce;
- 1 tablespoon dark soy;
- 1 teaspoon vegetable oil.
Recipe:
- Clean chicken wings, cut into half and pat dry;
- Cut mushrooms in half, squeeze out juice;
- Cut wood ears to ribbon shape;
- Seed red dates;
- Add julienne ginger, cornstarch, sugar, Liquid Aminos and dark soy to chicken wings;
- Mix well;
- Mix in mushrooms, wood ears and red dates;
- Transfer to a shallow bowl, level evenly;
- Steam in a steamer/wok over water over medium high heat for 20 minutes;
- Check water level to avoid drying out;
- Plate, serve hot with rice.
