Baby Fennel Salad with Cherries

Ingredients:

  • 3/4 cup thinly sliced baby fennel;
  • 7 - 8 Michigan sweet cherries, pitted and cut to small pieces;
  • 1/4 teaspoon sea salt;
  • 1 tablespoon fresh lemon juice;
  • !/4 teaspoon lemon zest;
  • 1/2 teaspoon cane sugar, adjust for taste.

Recipe:

Serving for 2
with meat or alone

  1. Sliced baby fennel thinly;
  2. Place in a middle size bowl;
  3. Add sea salt, lemon zest and lemon juice;
  4. Mix, set aside for 15 - 20 minutes or more;
  5. Add cane sugar, adjust for taste;
  6. Top with pitted cherries, serve chill;
  7. Add black pepper and/or olive oil if desire.
