Mozzarella Tomato Salad with Garlic Balsamic Dressing

Ingredients:

For mozzarella tomato salad

  • 1 fresh mozzarella, about 1 - 1 1/2 lb (0.5 - 0.75 kg);
  • 1 large tomato.

For garlic balsamic dressing

  • 6 - 7 cloves roasted garlic;
  • 1/4 cup (60 ml) balsamic vinegar;
  • 5 - 6 leaves fresh basil;
  • 1 tablespoon olive oil;
  • Sugar/honey if needed;
  • Sea salt, adjust to taste, and pepper.

Recipe:

Serving for 4 as an appetizer

For mozzarella tomato salad

  1. Cut mozzarella to half, slice to 3/8” (3 mm);
  2. Cut tomato to half, slice to 3/8” (3 mm);
  3. Roll basil leaves and cut;
  4. Sandwich mozzarella and tomato;
  5. Garnish with chopped basil;
  6. Top with garlic balsamic dressing, serve chill.

For garlic balsamic dressing*

  1. Add roasted garlic to a small bowl;
  2. Mash it with a spoon;
  3. Mix in balsamic vinegar;
  4. Add salt and pepper for taste;
  5. Top with olive oil;
  6. Add sugar/honey if needed.

* This dressing will work without the garlic

if you are sensitive to it.
