Snow Pea Shoots with Crab Meat Sauce 蟹肉扒豆苖
Ingredients:
For snow pea shoots
- 1 lb (0.5 kg) snow pea shoots;
- 3 tablespoons vegetable/canola oil;
- Sea salt.
For crab meat sauce
- 1/2 cup cooked crab meat;
- 1 small piece ginger, peel and finely mince (about 1 tablespoon);
- 2 egg whites;
- 1 tablespoon vegetable/canola oil.
For thickening sauce
- 1/2 teaspoon corn starch;
- 1/2 teaspoon sugar;
- 1/4 cup (80 ml) water.

Recipe:
- Clean and break snow pea shoots to smaller pieces, get rid of the stems;
- Add 3 tablespoons vegetable/canola oil in a large sauté pan/wok;
- Sauté snow pea shoots over medium high heat;
- Take them out, set aside;
- Add 1 tablespoon oil and sauté minced ginger until translucent;
- Sauté crab meat for 1 minute avoid overcooking;
- Take it out, set aside;
- Place egg whites in and turn off heat;
- Add crab meat back in;
- Add juice from the sautéd snow pea shoots;
- Turn heat back on;
- Add thickening sauce;
- It is done when it comes back to a boil;
- Pour on top of the sautéd snow pea shoots;
- Serve hot.
