Snow Pea Shoots with Crab Meat Sauce 蟹肉扒豆苖

Ingredients:

For snow pea shoots

  • 1 lb (0.5 kg) snow pea shoots;
  • 3 tablespoons vegetable/canola oil;
  • Sea salt.

For crab meat sauce

  • 1/2 cup cooked crab meat;
  • 1 small piece ginger, peel and finely mince (about 1 tablespoon);
  • 2 egg whites;
  • 1 tablespoon vegetable/canola oil.

For thickening sauce

  • 1/2 teaspoon corn starch;
  • 1/2 teaspoon sugar;
  • 1/4 cup (80 ml) water.

Recipe:

  1. Clean and break snow pea shoots to smaller pieces, get rid of the stems;
  2. Add 3 tablespoons vegetable/canola oil in a large sauté pan/wok;
  3. Sauté snow pea shoots over medium high heat;
  4. Take them out, set aside;
  5. Add 1 tablespoon oil and sauté minced ginger until translucent;
  6. Sauté crab meat for 1 minute avoid overcooking;
  7. Take it out, set aside;
  8. Place egg whites in and turn off heat;
  9. Add crab meat back in;
  10. Add juice from the sautéd snow pea shoots;
  11. Turn heat back on;
  12. Add thickening sauce;
  13. It is done when it comes back to a boil;
  14. Pour on top of the sautéd snow pea shoots;
  15. Serve hot.
