Garlic Scallop Cups

Ingredients:

  • 1/2 lb (250 g) fresh scallops;
  • 4 pieces bread;
  • 10 cloves garlic, about 4 teaspoons, finely minced;
  • 4 tablespoons mayonnaise;
  • 4 teaspoons grated Parmigiano-Reggiano cheese.

Recipe:

Serving for 4 as appetizer

  1. Clean scallops, pat dry and wrap with paper towel;
  2. Put back to the refrigerator until ready to cook;
  3. Pre-heated oven to 450˚F (235˚C);
  4. Cut scallops to small pieces;
  5. Place on the bottom of ramekins;
  6. Top with minced garlic;
  7. Place in the oven for 5 minutes;
  8. Cut bread in the shape of the ramekins, set aside;
  9. Take them out, spread mayonnaise and top with bread;
  10. Put back under the broiler for 2 minutes;
  11. Sprinkle grated cheese on top of bread;
  12. Place them back under the broiler;
  13. Keep an eye on them to avoid burning;
  14. Let them cool and serve warm.
