Ingredients:

  • 1 whole cat fish about 2 lb (1 kg);
  • 2 tablespoons canola oil;
  • 2 tablespoons fermented black beans, rinsed and soaked in 1/2 cup (120 ml) water for 10 minutes, drained;
  • 4 cloves garlic, peeled and finely minced (about 1 tablespoon);
  • 1 piece ginger, peeled and finely minced (about 1 tablespoon);
  • 3 pieces green spring onions;
  • 1 tablespoon Liquid Aminos (a healthier version of soy sauce can be find in health food store or upscale supermarket);
  • 1 tablespoon dark soy sauce;
  • 1 1/2 cups (360 ml) water.

Recipe:

Serving for 2

  1. Press drained black beans, garlic and ginger in a mortar;
  2. Mix with Liquid Aminos and dark soy sauce;
  3. Let the sauce sit for 5 minutes to marinate;
  4. Add canola oil;
  5. Place green spring onions on the bottom of an 1” deep shallow bowl to avoid fish from sticking;
  6. And then place cat fish and top with black bean sauce;
  7. Steam for 20 minutes, serve hot with steam rice.
