Ingredients:
- 1/2 lb (0.25 kg) cooked chicken, 3/8” (1 cm) cubes;
- 1 cooked chicken carcass;
- 1 cup cooked white rice, can be substitute with brown rice;
- 1/2 tablespoon vegetable oil;
- 1/2 cup chopped onion;
- 1/2 cup finely minced carrot;
- 1/2 cup chopped celery;
- 3 cups (720 ml) water;
- Sea salt.

Make about 4 cups
- Add vegetable oil in a sauce pan;
- Sauté onion until soft but not brown;
- Add water over medium high heat;
- Add chicken carcass and rice when it comes to a boil;
- Cook them until rice starts to fall apart, about 25 minutes;
- Take out chicken carcass and discard;
- Add minced carrot and sea salt and cook for 5 minutes;
- Add chopped celery and cook for another minute;
- Spoon soup into a bowl;
- Top with cooked chicken, serve hot.
