Italian Farro Salad

Ingredients:

  • 1 cup Italian farro;
  • 2 cups (480 ml) water;
  • 1 small red onion, diced;
  • 1/4 lb (125 g) fresh green beans, branched and chopped;
  • 1/4 lb (125 g) fresh asparagus, branched and chopped;
  • 1/2 lb (250 g) carrot, diced;
  • 3 stacks celery, diced;
  • 1/4 cup roasted peanuts;
  • 1 teaspoon sesame oil;
  • 1 tablespoon Liquid Aminos (a healthier version of soy sauce can be find in health food store or upscale supermarket);
  • Sea salt.

Recipe:

Serving for 6 as a side dish

  1. Rinse farro for 3 minutes;
  2. Add to 2 cups of boiling water;
  3. Boil for 20 minutes or until all the water is evaporated;
  4. Turn off heat and cover for 10 minutes;
  5. Transfer in a large bowl to cool;
  6. Branch the asparagus and green beans in salted boiling water for 2 minutes;
  7. Cool down and cut to 1/4” (0.5 cm) pieces;
  8. Dice celery, carrots and red onion to 1/4” (0.5 cm) pieces;
  9. Put peanut in a plastic bag and crash to small pieces;
  10. Add chop vegetables to cool down farro;
  11. Add Liquid Aminos and sesame oil;
  12. Mix well;
  13. Top with crashed peanuts;
  14. Serve room temperature.
