Pickled Turnip Dry Shrimp Omelette 菜圃蝦米炒蛋
Ingredients:
- 1 cup pickled turnip, cut to small cubes;
- 3 tablespoons Chinese dry shrimps;
- 4 fresh eggs;
- 2 tablespoons vegetable oil.

Recipe:
- Soak pickled turnip for 20 minutes and drain;
- Cut into 3/8” (1 cm) cubes;
- Heat up a pan over medium heat with no oil;
- Place pickled turnip in to dry out moisture and intensify favor;
- Soak dry shrimps for 10 minutes and drain;
- Rough chop dry shrimps;
- Beat eggs lightly with some egg white showing;
- They will look better when cooked;
- Open up pickled turnip, add 1 tablespoon vegetable oil;
- Add dry shrimps and let them cook together for 1 minute;
- Add more vegetable oil if needed;
- Pour eggs in the pan;
- Do not move and let the egg become more solid;
- Even eggs, give them a chance to cook;
- Flip the whole thing to cook the other side;
- Plate and serve with rice.
