Saffron Rice with Caper and Honey Roasted Peanuts
Ingredients:
- 1 cup jasmine rice;
1 1/4 cups (300 ml) water;
A pinch dry saffron, soak in 1/4 cup (60 ml) water;
1 tablespoon unsalted butter;
1 tablespoon chopped caper;
1/4 cup chopped honey roasted peanuts;
1 piece mint leaf.

Recipe:
- Soak a pinch dry saffron in 1/4 cup (60 ml) water for 5 - 10 minutes;
- Cook rice in the rice cooker with 1 1/4 cups (300 ml) water and saffron water;
- Chop honey roasted peanuts in a food processer;
- Chop capers to smaller pieces;
- Put cooked rice in a large bowl;
- Mix in 1 tablespoon unsalted butter;
- Let butter melt;
- Mix in capers and peanuts;
- Decorate with mint, serve hot.
