Saffron Rice with Caper and Honey Roasted Peanuts

Ingredients:

  • 1 cup jasmine rice;
    1 1/4 cups (300 ml) water;
    A pinch dry saffron, soak in 1/4 cup (60 ml) water;
    1 tablespoon unsalted butter;
    1 tablespoon chopped caper;
    1/4 cup chopped honey roasted peanuts;
    1 piece mint leaf.

Recipe:

  1. Soak a pinch dry saffron in 1/4 cup (60 ml) water for 5 - 10 minutes;
  2. Cook rice in the rice cooker with 1 1/4 cups (300 ml) water and saffron water;
  3. Chop honey roasted peanuts in a food processer;
  4. Chop capers to smaller pieces;
  5. Put cooked rice in a large bowl;
  6. Mix in 1 tablespoon unsalted butter;
  7. Let butter melt;
  8. Mix in capers and peanuts;
  9. Decorate with mint, serve hot.
