Ingredients:
- 1 piece flank steak, about 1 - 1 1/4 lb (500 - 625 g);
- 4 - 5 leaves lettuce, trim and press flat;
- 1 tablespoon minced ginger, peel and mince;
- 1 teaspoon minced Chinese dry tangerine, soak and mince;
- 4 water chestnuts (2 tablespoons), peel and mince;
- 20 pieces wonton skins;
- Water.
For marinate
- 1 tablespoon cornstarch;
- A pinch cane sugar;
- 1 tablespoon Liquid Aminos (a healthier version of soy sauce can be find in health food store or upscale market).
For dipping sauce
- 1/4 cup (60 ml) Worcestershire sauce.
Recipe:
Serving for 4, make about 20
- Clean flank steak and pat dry;
- Cut to small piece and mince in food processor;
- Add minced Chinese dry tangerine and water chestnuts;
- Marinate and mix well;
- Place lettuce on the bottom of a streamer, flatten lightly;
- Wet the edges of a wonton skin;
- Ball up minced flank steak;
- Place in the middle;
- Squeeze the edges to form a four point star dumpling with a open top;
- Wet the “wings” of the dumpling and fold;
- Press it and make it more round;
- Place dumplings in the steamer;
- Steam for 5 - 7 minutes;
- Check water level to avoid drying out;
- Turn off heat when they are cooked;
- Serve hot with dipping sauce.
