Ingredients:

For pork chops

  • 5 pieces 1/2” (1 cm) thick pork chops, about 1 1/2 to 2 lb (0.75 - 1 kg), clean and pat dry;
  • 1 tablespoon ginger juice;
  • 1 tablespoon safflower oil (for high heat);
  • 1 tablespoon liquid aminos/soy sauce;
  • 1 tablespoon dark soy;
  • Sea salt.

For onion mushroom sauce

  • 1 1/2 large onions, thinly slice, about 2 cups;
  • 3/4 lb (0.375 kg) oyster mushrooms or white button mushrooms;
  • 1 tablespoon safflower oil (for high heat);
  • 1 1/2 tablespoons ketchup;
  • 1 tablespoon worcestershire sauce
    2 tablespoon water.

For thickening sauce

  • 1 teaspoon cornstarch;
  • 1/2 teaspoon sugar;
  • 1/4 cup (60 ml) water;
  • 1 tablespoon liquid aminos/soy sauce;
  • 1 tablespoon dark soy.
