Steamed Spare Ribs with Black Bean Sauce 豆豉蒸排骨
Ingredients:
- 1 1/2 lb (0.75 kg) spare ribs, cut into 1” cubes, easier to have the butcher do it, salt lightly;
- 1 teaspoon peanut oil;
- 3 tablespoons fermented black beans, rinsed and soaked in 1/2 cup (120 ml) water for 10 mintues, drain;
- 4 cloves garlic, peeled and finely minced;
- 1 small piece ginger, peeled and finely minced (about 2 tablespoons);
- 2 tablespoons Liquid Aminos (a healthier version of soy sauce can be find in health food store or upscale supermarket);
- 1 tablespoon dark soy sauce.

Serving for 2
- Press drained black beans, garlic and ginger in a mortar;
- Mix with Liquid Aminos and dark soy sauce;
- Add sugar;
- Mix black bean mixture and spare ribs in a 1” deep bowl, leveled;
- Steam for 20 minutes, serve hot.
- Good with rice.
