Steamed Minced Pork with Salty Eggs 咸蛋蒸豬肉

Ingredients:

  • 1 piece pork shoulder or boneless pork chop, about 1 1/2 - 2 lb (0.75 - 1 kg);
  • 3 homemade salty eggs;
  • 1 tablespoon minced ginger, (1 piece of ginger, about 2 oz (60 g), peel and mince to small cubes);
  • 1/4 teaspoon cornstarch;
  • A pinch cane sugar;
  • 1 teaspoon Liquid Aminos (a healthier version of soy sauce can be find in health food store or upscale market);
  • 1 teaspoon vegetable/canole oil.

Recipe:

Serving for 2

  1. Clean pork and pat dry;
  2. Mince;
  3. Add minced ginger, cornstarch, sugar and Liquid Aminos/soy sauce to minced pork and mix well;
  4. Cut 2 egg yolks into small pieces;
  5. Mix in minced pork;
  6. Transfer to a shallow bowl, spread evenly;
  7. Top with egg whites and one whole egg yolk;
  8. Steam in a steamer/wok over water over medium high heat for 20 minutes;
  9. Check water level to avoid drying out;
  10. Turn off heat when it is cooked;
  11. Serve hot with rice.
