Ingredients:
- 1 - 1 1/2 lb (0.5 - 0.75 kg) spare ribs/boneless pork chops;
- 2 tablespoons ground bean sauce;
- 1/2 cup pickled bamboo shoots;
- 5 - 6 cloves garlic, peel and finely mince;
- 1 piece ginger, peel and finely mince (about 1 tablespoon);
- 1 tablespoon Liquid Aminos (a healthier version of soy sauce can be find in health food store or upscale supermarket);
- 1 tablespoon dark soy sauce;
- 1 teaspoon vegetable oil;
- 1 1/2 tablespoons cane sugar, adjust for taste.

Serving for 2
- Clean spare ribs/pork chops and pat dry;
- Cut into 1” cubes;
- Mix minced garlic, ginger and ground bean sauce in a mortar;
- Add Liquid Aminos and dark soy sauce;
- Taste pickled bamboo shoots to get a sense how salty it is;
- Mix in sugar;
- Add to ground bean sauce mix;
- Top with 1 teaspoon of vegetable oil;
- Mix into spare ribs/pork chops;
- Transfer to a shallow bowl, mix well;
- Steam in a steamer/wok over water over medium high heat for 20 minutes;
- Check water level to avoid drying out;
- It is done when meat fall off the bones;
- Serve hot with rice.
