Steamed Spare Ribs with Pickled Bamboo Shot and Ground Bean Sauce 酸笋原豉蒸排骨

Ingredients:

  • 1 - 1 1/2 lb (0.5 - 0.75 kg) spare ribs/boneless pork chops;
  • 2 tablespoons ground bean sauce;
  • 1/2 cup pickled bamboo shoots;
  • 5 - 6 cloves garlic, peel and finely mince;
  • 1 piece ginger, peel and finely mince (about 1 tablespoon);
  • 1 tablespoon Liquid Aminos (a healthier version of soy sauce can be find in health food store or upscale supermarket);
  • 1 tablespoon dark soy sauce;
  • 1 teaspoon vegetable oil;
  • 1 1/2 tablespoons cane sugar, adjust for taste.

Recipe:

Serving for 2

  1. Clean spare ribs/pork chops and pat dry;
  2. Cut into 1” cubes;
  3. Mix minced garlic, ginger and ground bean sauce in a mortar;
  4. Add Liquid Aminos and dark soy sauce;
  5. Taste pickled bamboo shoots to get a sense how salty it is;
  6. Mix in sugar;
  7. Add to ground bean sauce mix;
  8. Top with 1 teaspoon of vegetable oil;
  9. Mix into spare ribs/pork chops;
  10. Transfer to a shallow bowl, mix well;
  11. Steam in a steamer/wok over water over medium high heat for 20 minutes;
  12. Check water level to avoid drying out;
  13. It is done when meat fall off the bones;
  14. Serve hot with rice.
