Steamed Spare Ribs with Pickled Plums 梅子蒸排骨

Ingredients:

  • 1 lb (0.5 kg) spare ribs and 1 lb (0.5 kg) pork chop;
  • 1/2 teaspoon cornstarch;
  • 5 - 6 pickled plums;
  • 2 tablespoons ground soy bean sauce;
  • 4 cloves garlic, peel and finely mince;
  • 1 small piece ginger, peel and finely mince (about 1 tablespoon);
  • 1 tablespoon Liquid Aminos (a healthier version of soy sauce can be find in health food store or upscale supermarket);
  • 1 tablespoon dark soy sauce;
  • 1/2 tablespoon vegetable oil;
  • 1 teaspoon cane sugar, adjust for taste.

Recipe:

Serving for 2

  1. Clean spare ribs and pat dry;
  2. Cut into 1” cubes;
  3. Add cornstarch,
  4. Crust pickled plums, minced garlic, ginger and ground soy bean sauce in a mortar;
  5. Add Liquid Aminos, dark soy sauce and sugar, mix well;
  6. Mix in spare ribs;
  7. Transfer to a shallow bowl, spread evenly;
  8. Top with vegetable oil;
  9. Steam in a steamer/wok over water over medium high heat for 20 minutes;
  10. Check water level to avoid drying out;
  11. Turn off heat when it is cooked;
  12. Serve hot with rice.
