  • Ingredients:
  • 1 to 1 1/2 lb (0.5 to 0.75 kg) deep fried chicken feet;
  • 3/4 teaspoon fermented black bean, rinse and soak in water for 10 minutes, drain;
  • 4 cloves garlic, peel, press and rough chop;
  • 1/2 tablespoon vegetable oil;
  • 2 tablespoons liquid aminos (a healthier version of soy sauce can be find in health food store or upscale supermarket);
  • 1/2 cup (120 ml) water;
  • 2 tablespoons ketchup;
  • 1 teaspoon thinly sliced fresh Jalepano.

Recipe:

Serving for 4 as appetizer
  1. Rinse chicken feet and pat dry;
  2. Cut into smaller pieces;
  3. Press drained black bean and garlic in a mortar;
  4. Add 1/2 tablespoon vegetable oil to a large pan/wok over medium high heat;
  5. Add black bean mix sauté for one minute;
  6. Sear chicken feet for 3 minutes;
  7. Add liquid aminos;
  8. Add 1/2 cup of water and cover;
  9. Turn to simmer when it comes to a boil;
  10. Cook for 30 minutes or chicken feet is tender;
  11. Add 2 tablespoons ketchup;
  12. Add fresh Jalepano if desire for spice and color;
  13. Plate and serve hot.
