Ingredients:
- 1 black chicken, about 1 1/2 - 2 lb (0.75 - 1.0 kg), can be substituted with chicken;
- 1/4 cup ginger (1 medium piece ginger, about 4 - 6 oz, (0.3 - 0.35 kg)), clean and chop;
- 1/2 cup wood ears, soak, clean and slice;
- 1/4 cup raw peanuts, soak and clean;
- 1 tablespoon vegetable oil;
- 3 cups (720 ml) water;
- 1/2 cup Chinese rice wine;
- Sea salt, about 1/2 tablespoon.

Serving for 4
- Clean chicken and pad dry;
- Cut into large pieces;
- Add 1 tablespoon vegetable oil to a wok/sauce pan over medium high heat;
- Sear ginger for 5 minutes, take it and set aside;
- Brown chicken on all sides;
- Add ginger back in and top with wood ears, stir well;
- Transfer to a pot of boiling water;
- Add raw peanuts;
- Simmer for at less 45 minutes or the chicken falls off the bone when it comes back to a boil;
- Turn off heat and add rice wine;
- Serve hot in a bowl.
