Black Chicken Soup with Chinese Rice Wine 竹枝(烏)雞酒湯 Black Chicken Soup with Chinese Rice Wine 竹枝(烏)雞酒湯

Ingredients:

  • 1 black chicken, about 1 1/2 - 2 lb (0.75 - 1.0 kg), can be substituted with chicken;
  • 1/4 cup ginger (1 medium piece ginger, about 4 - 6 oz, (0.3 - 0.35 kg)), clean and chop;
  • 1/2 cup wood ears, soak, clean and slice;
  • 1/4 cup raw peanuts, soak and clean;
  • 1 tablespoon vegetable oil;
  • 3 cups (720 ml) water;
  • 1/2 cup Chinese rice wine;
  • Sea salt, about 1/2 tablespoon.

Recipe:

Serving for 4

  1. Clean chicken and pad dry;
  2. Cut into large pieces;
  3. Add 1 tablespoon vegetable oil to a wok/sauce pan over medium high heat;
  4. Sear ginger for 5 minutes, take it and set aside;
  5. Brown chicken on all sides;
  6. Add ginger back in and top with wood ears, stir well;
  7. Transfer to a pot of boiling water;
  8. Add raw peanuts;
  9. Simmer for at less 45 minutes or the chicken falls off the bone when it comes back to a boil;
  10. Turn off heat and add rice wine;
  11. Serve hot in a bowl.
