Ingredients:
- 2 large not riped Hawaiian/ Mexican mangos(red and green in color), they should be firm to the touch; (The mangos should not be ripped because the cubes will keep their shapes after the lemon juice is addeds.)
- 1 large red pepper;
- Fresh cilantro;
- 1 large red onion;
- Lemon juice from 3 large lemons;
- 1 tablespoon honey.
Recipe:
- Dice the red onions to 3/8" (1cm) cubes and place it in a bowl of lemon juice overnight. The onions will be pickled;
- Cut mangos one third along the pit;
- Peel off skin with a peeler or a knife;
- Dice the mango to medium size cubes, about 3/8” (1 cm);
- Dice the bell peppers to the same size as mango;
- Chop cilantro lightly to avoid bluising;
- Mix with dressing in a big bowl;
- Add honey;
- Mix well;
- Serve chill, good with chicken, pork or steak.
