Ingredients:
For mozzarella tomato salad
- 1 fresh mozzarella, about 1 - 1 1/2 lb (0.5 - 0.75 kg);
- 1 large tomato.
For garlic balsamic dressing
- 6 - 7 cloves roasted garlic;
- 1/4 cup (60 ml) balsamic vinegar;
- 5 - 6 leaves fresh basil;
- 1 tablespoon olive oil;
- Sugar/honey if needed;
- Sea salt, adjust to taste, and pepper.

Serving for 4 as an appetizer
For mozzarella tomato salad
- Cut mozzarella to half, slice to 3/8” (3 mm);
- Cut tomato to half, slice to 3/8” (3 mm);
- Roll basil leaves and cut;
- Sandwich mozzarella and tomato;
- Garnish with chopped basil;
- Top with garlic balsamic dressing, serve chill.
For garlic balsamic dressing*
- Add roasted garlic to a small bowl;
- Mash it with a spoon;
- Mix in balsamic vinegar;
- Add salt and pepper for taste;
- Top with olive oil;
- Add sugar/honey if needed.
* This dressing will work without the garlic
if you are sensitive to it.
