Ingredients:

For Dungeness crab

  • 1 Dungeness crab, about 2 1/2 - 3 lb (1.25 - 1.5 kg).
  • For ginger red vinegar sauce

  • 1 piece ginger, about 2 - 4 oz (60 - 120 g), peel and mince 1 tablespoon;
  • 1/4 cup (60 ml) Chinese red vinegar;
  • 1/2 tablespoon sesame oil.

Serving for 2

For Dungeness crab

  1. Open Dungeness crab and get rid of mouth, gill and the sandy pouch;
  2. Clean crab with tooth brush;
  3. Cut into smaller pieces;
  4. Drill water and place in a shallow bowl;
  5. Put back to refrigerator until ready to cook;
  6. Place the whole bowl of crab over 2” water to steam;
  7. Cover for 12 minutes, until crab turns red;
  8. Serve hot with ginger red vinegar sauce.

For ginger red vinegar sauce

  1. Finely mince ginger;
  2. Add Chinese red vinegar;
  3. Mix and top with sesame oil.
