Ingredients:
- 1/2 lb (0.25 kg) cook crab meat;
- 1/2 lb (0.25 kg) dry e-fu noodles (any Chinese egg noodles);
- 1/2 tablespoon canola/ vegetable oil;
- 1/2 lb (0.25 kg) Chinese broccoli, cleaned and cut into 2” pieces;
- 2 cups (480 ml) water;
- Chopped Chinese parsley (cilantro);
- Red (Chinese) vinegar;
- Sea salt.
Recipe:
Serving for 2
- Heat up 2 cups of water in a stock pot over medium high heat;
- Put the egg noodles to boiling water;
- Cook it under they are soft;
- Take them out and set aside, discard water;
- Heat up the rest of water in a pot over medium high heat;
- Add canola oil and sea salt when it comes to a boil;
- Add Chinese broccoli until water boils again, about 2 minutes;
- Place the broccoli on a bottom of a large bowl;
- Top it with cooked egg noodles;
- Add crab meat to the pot when water comes back to a boil, turn the heat off right away;
- Add the crab meat soup to the Chinese broccoli and egg noodles;
- Top with cilantro and serve hot with red vinegar on the side.
