Crab Meat E-Fu Noodle Soup 蟹肉伊湯麵

Ingredients:

  • 1/2 lb (0.25 kg) cook crab meat;
  • 1/2 lb (0.25 kg) dry e-fu noodles (any Chinese egg noodles);
  • 1/2 tablespoon canola/ vegetable oil;
  • 1/2 lb (0.25 kg) Chinese broccoli, cleaned and cut into 2” pieces;
  • 2 cups (480 ml) water;
  • Chopped Chinese parsley (cilantro);
  • Red (Chinese) vinegar;
  • Sea salt.

Recipe:

Serving for 2

  1. Heat up 2 cups of water in a stock pot over medium high heat;
  2. Put the egg noodles to boiling water;
  3. Cook it under they are soft;
  4. Take them out and set aside, discard water;
  5. Heat up the rest of water in a pot over medium high heat;
  6. Add canola oil and sea salt when it comes to a boil;
  7. Add Chinese broccoli until water boils again, about 2 minutes;
  8. Place the broccoli on a bottom of a large bowl;
  9. Top it with cooked egg noodles;
  10. Add crab meat to the pot when water comes back to a boil, turn the heat off right away;
  11. Add the crab meat soup to the Chinese broccoli and egg noodles;
  12. Top with cilantro and serve hot with red vinegar on the side.
