Ingredients:
- 1 black chicken, about 1 1/2 - 2 lb (0.75 - 1.0 kg), can be substituted with chicken;
- 10 - 12 pieces American ginseng, about 1 oz (30 g), rinse and soak for half an hour;
- 1 piece ginger, about 2 - 3 oz, (60 - 90 g), clean and chop;
- 3 cups (720 ml) water;
- Sea salt, adjust for taste.

Serving for 4
- Cut chicken into halfs or quarters;
- Clean with salt and wash it off;
- Add 3 cups (720 ml) water in a soup pot over medium high heat;
- Add ginger, American ginseng and black chicken when water comes to a boil;
- Turn to simmer when comes back to a boil;
- Cook for about 2 hours or when chicken falls off the bone;
- Add sea salt for taste;
- Serve hot in a bowl.
