Black Chicken Soup with American Ginseng  花𣄃參烏雞Black Chicken Soup with American Ginseng 花𣄃參烏雞

Ingredients:

  • 1 black chicken, about 1 1/2 - 2 lb (0.75 - 1.0 kg), can be substituted with chicken;
  • 10 - 12 pieces American ginseng, about 1 oz (30 g), rinse and soak for half an hour;
  • 1 piece ginger, about 2 - 3 oz, (60 - 90 g), clean and chop;
  • 3 cups (720 ml) water;
  • Sea salt, adjust for taste.

Recipe:

Serving for 4

  1. Cut chicken into halfs or quarters;
  2. Clean with salt and wash it off;
  3. Add 3 cups (720 ml) water in a soup pot over medium high heat;
  4. Add ginger, American ginseng and black chicken when water comes to a boil;
  5. Turn to simmer when comes back to a boil;
  6. Cook for about 2 hours or when chicken falls off the bone;
  7. Add sea salt for taste;
  8. Serve hot in a bowl.
