Ingredients:
- A whole fresh or cut up pineapple;
- 1/4 cup (60 ml) tequila;
- 1/2 cup (120 ml) sweet white wine;
- 1 tablespoon honey;
- 1/2 tablespoon cane sugar.
Recipe:
- Cut off skin and the eyes of the pineapple;
- Clean and cut to 3/4” (2 cm) thick slices;
- Place in a big bowl;
- Add tequila, white wine and 1 tablespoon of honey;
- Mix them and let marinate for at less 2 hours or better overnight;
- Place pineapple on a baking pan;
- Put in a 350˚F (175˚C) pre-heated oven for 20 minutes;
- Springle 1/2 tablespoon of cane sugar on top;
- Put it in the broiler for 2 minutes and keep an eye on it to avoid burning;
- It will form a crest and add a nice texture to the pineapple;
- Go well with chicken, duck, steak, pork chop and even ice-cream.
