Brussels Sprouts with Smoked Sausage

Ingredients:

  • 2 cups brussels sprouts, about 1 1/2 lb (0.75 kg);
  • 1/2 cup smoked sausage, cut to small cubes;
  • 1 teaspoon vegetable oil;
  • 1 tablespoon balsamic vinegar;
  • 1 teaspoon truffle oil;
    Sea salt.

Recipe:

Serving for 4 as a side dish

  1. Cut brussels sprouts to 1/8” (1/2 cm) slices;
  2. Add 1 teaspoon vegetable oil to a pan over medium high heat;
  3. Render the fat from smoked sausage;
  4. Take them out leave as much oil in the pan;
  5. Set smoked sausage aside;
  6. Sauté brussels sprouts;
  7. Add sea salt and 1 tablespoon water;
  8. Cover for 5 to 7 minutes or until brussels sprouts get soft;
  9. Add 1 tablespoon balsamic vinegar;
  10. Mix sauté smoked sausage back;
  11. Plate and top with 1 teaspoon truffle oil;
  12. Serve warm.
