Pickled Turnip Dry Shrimp Omelette 菜圃蝦米炒蛋


  • 1 cup pickled turnip, cut to small cubes;
  • 3 tablespoons Chinese dry shrimps;
  • 4 fresh eggs;
  • 2 tablespoons vegetable oil.


  1. Soak pickled turnip for 20 minutes and drain;
  2. Cut into 3/8” (1 cm) cubes;
  3. Heat up a pan over medium heat with no oil;
  4. Place pickled turnip in to dry out moisture and intensify favor;
  5. Soak dry shrimps for 10 minutes and drain;
  6. Rough chop dry shrimps;
  7. Beat eggs lightly with some egg white showing;
  8. They will look better when cooked;
  9. Open up pickled turnip, add 1 tablespoon vegetable oil;
  10. Add dry shrimps and let them cook together for 1 minute;
  11. Add more vegetable oil if needed;
  12. Pour eggs in the pan;
  13. Do not move and let the egg become more solid;
  14. Even eggs, give them a chance to cook;
  15. Flip the whole thing to cook the other side;
  16. Plate and serve with rice.
